I saw Tom Kerridge making star anise carrots recipe on TV last week and just had to try it for Christmas Day. I wasn’t sure whether to take the risk but oh boy was it worth. it… i strongly strongly strongly recommend you try it too (when i say strongly I mean STRONGLY!
What you need…
10 baby carrots or 4 grown up carrots… this will be enough for at least 4 to 6 people.
250g of butter salted or unsalted
400ml of water
150g of white sugar
4 star anise
What you need to do…
Peel carrots and trim as necessary. Baby carrots can obviously be used whole but the grown up ones can be cut into chunky batons… Tom uses a clean green scourer to scrub the baby carrots.
Put the water, butter, sugar and star anise in a pan and bring to a boil.
Simmer and drop the carrots in …
Continue to simmer until they are tender, about 45 minutes and the liquid is reduced to about a half!!

My husband has made these twice now and they are just gorgeous!! We didn’t have any star anise so he substituted with a couple of cloves, which worked a treat. This recipe is definitely a keeper – thank you!

Thank you for the feedback! A friend of mine also substituted the star anise with a stick or two of cinnamon… I’ll try the cloves next time too!

These are so good! Had a beef tenderloin and mashed potatoes, roasted Brussels sprouts
and brown sauce. The carrots were the perfect accompaniment with everything else. Great dinner! Try them you won’t be sorry and they
are easy to make…delicious.

do you think theese great carrots would go along with a nice piece of entrecôte? or do they taste too christmasy?
i will make a dinner with engrecôte, some kind of potato and warm vetetables…and i am really curious about theese carrots. have not tried them myself yet and i must nail the combination in this dish…what do you reckon?

These carrots are very tender, buttery and sweet. The star anise can make them quite “Christmassy” so if you’re not looking for that combination it may not be ideal. However, I do know they have been placed with a variety of meats but I wouldn’t know how it works as I am a vegetarian lol
Do what I do, try it once and adapt or abandon 🙂
